Fig products from production to packaging

In order to get to the final product which is dried fig, which will reach our hands for consumption in a separate package, there are some procedures that must be completed in a very specific way.

These procedures have remained the same since the first years of fig cultivation, long before the fig came to Evia. The journey began somewhere outside of Izmir. From there people brought the variety that is now cultivated in Taxiarchis of North Evia and the surrounding areas. It all starts in June, when the process of fertilizing the figs begins. At this time the producer picks wild figs, in which an insect is found that will pollinate the fruit.

After the fertilization of the fig, we see the fruit ripen on the tree and grow, until the time comes when unless it is cut to be eaten fresh, it continues to ripen until it falls from the tree.

This fig that has fallen from the fig tree is the one that is picked to dry.
Drying is carried out in a 100% natural way, under the sun.

More specifically, the figs are placed in concrete crates and they are spread next to each other. The crates are placed under the sun, which will eventually dry the fruit.

The fig, now dry, is ready to be processed in the packaging plant where it is sterilized and placed in its packaging to reach the consumer as a final product.
